Cafe Cortado / Manchado:
The Cortado / Machado is made by first making a solo ( large espresso ) to which is added a small amount of milk, in which the Cortado has slightly more milk then the Manchado ( una mancha means A spot ). This way of serving the coffee started to reduce the acid taste of some coffee varieties. The milk ( full or descremada ) has to be hot. Mostly in Spain one will serve this version in a glass.
Coffee lovers will agree that this is not the best way to serve coffee. This has several reasons: 1 Glas has not the correct quality to hold the temperature to be able to enjoy a hot cup of coffee untill the last drop. 2 These glasses do not have ears to take them without burning your hands. Therefore the temptation is big for a waiter to serve you the glas holding it at the top which is not hygienic. |
