The best place for preserving cheese is the fridge, which provides a suitably dry, cool environment. Matured cheeses should be kept in the least cold part of the fridge, namely the vegetable drawer. Fresh cheeses, however should be kept in the coldest part at around 4ºC, as they contain far more moisture and cannot be preserved for so long. Once cut, pieces of cheese should be wrapped in greaseproof paper or cling film. As far as the preservation of cheese is concerned, there are two parameters which play a key role, namely temperature and humidity. Prior to its consumption, cheese should always be removed from the fridge sufficiently in advance to allow it to cool off so that we can appreciate all of its aroma and flavor.
