Meloja is a compote based
on honey and
fruit like appel, quince
and different kinds of pumpkin.
This mixture undergoes a long process of boiling to have the end
product with its brilliant dark color. It has a sour/sweet taste.

Use Meloja to give an
extra taste to the following dishes:
Spanisch
Natillas : Cook 1 liter milk, lemon rind and cinnamon during 10
minutes after which we put it to simmer. Meanwhile prepare in a bowl
: 4 eggs, 200 gram sugar and a spoon cornflour, whisk up until a
foam exist and the whole swells. Extract the cinnamon and the lemon
and add the mixture of the eggs to the warm milk, do not stop
stirring. While stirring let it for 5 minutes simmer. Prepare the
bowls by putting a cookie on the bottom with on top a bit of Meloja
and then add the mixture. Let this cool down. Before serving
decorate with a spoon Meloja and some pieces fruit.
Other possibilities:
fried fish with Meloja, pastry, tortilla, pancakes, croissants,
fruit, garnishing vegetable, and many more.
